CHRISTIANS are marking Easter. It is an annual celebration one of the resurrection from the dead of Jesus on the third day after his crucifixion. During this period many Christains are involved in a lot of activities such as going to church, organising crusades and going on picnics to catch some fun. In the course of celebrating this special season many palatable dishes are prepared. One of such foods that can be used to celebrate Easter is Iwuk-edesi.This dish originates from the Calabar area of southern Nigeria but it is widely eaten across the country. The main ingredient of this dish is rice. Iwuk-edesi is a nutritious, tasty and balanced diet. This dish contains all the six classes of nutrients (carbohydrate, protein, fat, vitamins, mineral and water) in the right proportion and all the ingredients used in the preparation are effective in maintaining good health.Iwuk-edesi is rich in protein, complex carbohydrate, vitamin (vitamin A, C, D, K, B-complex group of vitamins such as niacin, vitamin B-6 (pyridoxine), thiamin and pantothenic acid), mineral (selenium, iron, folates, calcium) and vegetable fibre. Iwuk-edesi is therefore nutritious and well balanced meal as far as nutritional composition is concerned.Consumption of Iwuk-edesi is good for both healthy and ill persons. Ingredients QuantitiesBeef 8 piecesRice 3 cupsSmoked prawns(dressed) 10piecesSpinach(shredded) 1 small bunchFresh tomatoes 4 medium sizeOnion 1 small bulbCrayfish (gound) 2 tablespoonsFresh pepper 3 medium sizePalm oil 2 cooking spoonsMaggi crayfishtablets 2Beef stock 2 cupsWater 2 litresSalt To tasteMethod ofpreparationSeason the beef with onion, salt and half of maggi crayfish tablet.Add 2 cups of water.Steam for 45 minutes and set aside.Parboil the rice with 3 cups of water for minutes.Strain and wash.Wash and blend the tomato and pepper.Heat the palm oil.Fry the onion, tomato and pepper in the oil.Add the rice, beef stock, crayfish and the dressed smoked prawns.Stir and add the remaining maggi crayfish tablets and salt to taste.Reduce the heat, add 1 cup of water, continue to add water when water dries up.Cook till the grains are soft.Add the shredded spinach.Stir and simmer for few minutes.Remove from heat and serve as Easter lunch or dinner meal. Banana shakeThis shake is highly nutritious and has a pleasant taste. Banana shake is highly medicinal.
